Malic acid is found in various plant juices and is formed as an intermediate in the Krebs cycle, where it plays a role in the complex process of producing ATP - the energy within the mitochondria. Malic acid is found in a wide variety of fruits and vegetables, but the richest source is apples, which is why malic acid is sometimes referred to as "apple acid."

Malic acid is a powerful detoxifier of aluminium, and may offer benefit in the chelation and removal of heavy metals. Although malic acid acts as an acid in the stomach, it actually has an alkaline effect in the bloodstream. As the typical British diet, rich in meat, wheat and dairy tends to be acid-forming, the addition of malic acid can help support the blood pH balance thus limiting the negative effect of certain acids, i.e. lactic acid and uric acid.
